Tom's Corn Casserole

Amount Measure Ingredient
1 small onion (chopped)
1/2 medium green pepper (chopped)
1/4 stick margerine
1 can whole kernal corn (undrained)
1 can creamed corn
1 pkg. (8 1/2 ounces) Jiffy Corn Muffin mix
3 -- eggs (beaten)
1/4 cup pimento
1 cup grated sharp cheese
1/2 pint sour cream


  • Saute onions and pimento in melted margarine.
  • Combine all ingredients in a casserole dish, except the cheese and sour cream.
  • Mix the cheese and sour cream together and dabble on top.
  • Bake at 350 degrees for 40 minutes.
