Tip: Handling Cream

Store cream in the coldest part of the refrigerator. It will last for about 1 week past the sell-by date. For the best results when whipping cream, start with everything cold -the cream, the bowls, and the beaters. Whisk or beat the cream steadily at medium speed and beat just until it holds soft peaks. The cream will turn to butter if whipped too long.
