Tip: Chinese Cabbage

Chinese cabbage, sometimes called Napa cabbage or celery cabbage, can be recognized by its solid, oblong heads of long, smooth stalks with crinkly, thick-veined pale green leaves. Unlike the strong flavor of head cabbage, Chinese cabbage is delicately mild. It can be used raw or in stir-fries. In most supermarkets, it is available year-round. Refrigerate, tightly wrapped, for up to 3 days.
