Tip: Wine Vinegars

Wine vinegars, produced from the acetic fermentation of wine, are mellow in flavor and retain the aroma of the wine from which they are made. Most vinegars will keep for up to 2 years without fermentation. Some, especially red wine vinegars, may become cloudy or develop a sediment. If this happens, the flavor will not be affected; the liquid can be cleared by running it through a paper coffee filter.
