Here are five quick fixes for Thanksgiving kitchen disasters, courtesy of Good Morning America.
Problem: The turkey is still frozen. Solution: Put the turkey in a bucket with cool running water until it is defrosted.
Problem: The turkey is browning too quickly. Solution: Shield the turkey with an aluminum foil tent.
Problem: The turkey is too dry. Solution: After slicing the turkey, pour some hot turkey or chicken stock on it. Don't pour the liquid on before slicing, unless you want soggy skin.
Problem: The mashed potatoes are lumpy. Solution: Run the potatoes through a food mill or blender. If the potatoes are too sticky, add hot -- not cold -- milk or cream to loosen things up.
Problem: The gravy is lumpy. Solution: Use a blender -- immersion or regular -- to take care of some of the lumps, then run the gravy through a fine strainer to catch the others.
