RECIPE: Bacon and pecans and praline, oh my!

Many people believe bacon is the only real food that matters. For all you bacon-lovers out there who also love the sweeter things in life, enjoy this recipe of bacon pecan praline! 

Recipe: Bacon pecan praline
Number of Servings: 6 pieces
Prep Time: 10 minutes
Cooking Time: 1 hour
Type of dish: Appetizer
Equipment needed: Stove top

1 ½ cups granulated sugar
1 cup brown sugar
¾ cup evaporated milk
4 oz heavy cream
½ cup butter
Pinch of salt
1 cup pecans
Bacon strips
Semi-sweet chocolate bar

To make the praline:
Place the granulated sugar, brown sugar, evaporated milk, heavy cream, butter, pinch of salt and pecans in a pan, cook them to 250 degree F (or boil for 30 minutes). Constantly stir the mixture in the pot for the 30 minutes while it is boiling. The liquid will be thick when it is ready to be removed from the heat.
Once you have removed the mixture from the heat, pour the mixture over a marble table to cool or scoop it with a 4 oz ice cream scoop and let it cool on a flat surface to finish the praline.

While the mixture is cooling:
Cook the bacon strips by your preferred method of cooking them. Place to the side to cool.
Heat semi-sweet chocolate bar in a pan over low-medium heat until chocolate is melted.

To finish the appetizer:
Take a cooked strip of bacon and dip it in the melted semi-sweet chocolate and place it on top of the cooled praline.
For a better, crisper piece of bacon, it can be defatted, which means to bake the bacon in the oven and all of the fat comes off of it. You would bake it for 12 minutes at 350 degrees.
