Hoosier Eats: Spinach Berry Salad with Walnut Vinaigrette

Salad Ingredients


Assorted berries

Fair Oaks Farms shredded Gouda cheese



Walnut Vinaigrette Ingredients

1 cup water

½ cup sherry vinegar

2 tbsp minced shallots

2 tbsp fine sea salt

¼ tsp freshly ground pepper

½ cup olive oil

½ cup imported walnut oil

Place all vinaigrette ingredients in a bowl and whisk together. Refrigerate until ready to serve. (The vinaigrette can be prepared up to 1 week in advance, covered and refrigerated.)

Compile spinach, assorted berries and shredded gouda cheese into salad bowl.

Drizzle vinaigrette over salad.

Top with walnuts.
